Blazin' Squash Pickles

Pickles from Squash? Yes, are they are so good. If you have ever grown squash in your garden, then you know how much you can harvest and you make everything you can think out of them. Some little farmer's wife decided to pickle them and you know they are good because the recipe has been around for a very long time. My relatives on my mother's side lived in a very small farming community in Texas called Gilliland. My sisters and I would spend 2 weeks of our summers out there with our cousins. My Aunt Jodie found out we had started our food business and sent me her Squash Pickle recipe. It's a bread and butter pickle but made from yellow squash.
These pickles, made from yellow squash, onions, green peppers and red peppers are similar in taste to bread and butter pickles.
If you like your pickles with a little spice, look for our Blazin' Squash Pickles.
Serve them very cold.
We took our regular Aunt Jodie's Squash Pickles and decided to have some fun by making them a little spicy! So, you have the wonderful bread and butter taste along with the spiciness of jalapenos. We also added carrots disks so the colors in the jar are absolutely beautiful. Cooking the veggies sort of tames down the peppers so it's not too hot...just right!
